This Fresh Fruit Shrub Recipe is another old-fashioned drink along the lines of a Switchel. This one is a tiny bit more complicated, but once you make the basic concentrate, you can add sparkling water anytime you like for a refreshing fruit drink. Use whatever berries are fresh at the market. Blueberries, raspberries, and blackberries work well.

Ingredients

  • 4 cups fresh assorted berries
  • 2 cups apple cider vinegar
  • 1-1/2 cups honey
  • Sparkling water

Directions

  • In a large glass jar, combine the berries and vinegar. Cover and let sit in your refrigerator for 3 days.
  • If you want a smooth drink, strain the liquid through a colander into a bowl to remove the solid parts of the fruits. If you prefer a chunkier drink, don’t strain; just mash the fruits together with the liquid, leaving the fruit solids in the mix.
  • Pour the fruity vinegar into a medium, nonreactive saucepan. Add the honey and stir well to combine. Bring to a boil, and cook for 2 minutes. Remove from the heat and allow to cool. Pour the sweetened mixture back into the glass jar and return to the fridge until ready to use.
  • When you’d like to have a glass of the drink, fill a glass with ice, add 1/4 cup of the fruit mixture, and fill the remainder of the glass with sparkling water. Taste and adjust with more concentrate if needed. You can also make this by the pitcher. Just figure out how many glasses your pitcher holds and portion accordingly.
